Recipe: Turkey Elegante

Turkey Eleganté (The accent makes it FRENCH!)
2.8 lb. frozen turkey roast
3 oz can SPAM spread
1/2 tube anchovy paste
1/3c plus 3 tbsp salted butter
1.5 c. all-purpose flour
1 tsp. seasoned salt
1 egg yolk, beaten
1 tbsp water

Preheat oven at 400º. Roast turkey according to package directions. Pour off drippings, reserve 1/3 cup. Cool. Combine flour and seasoned salt in mixer bowl. Cut in 1/3 c. butter at low speed of mixer until mixture is the size of small peas. Add 1/3 c. drippings. Continue mixing until dough just holds together. Roll out dough on well-floured pastry cloth into a 16x12 rectangle.
Combine SPAM spread, anchovy paste, and 3 tbsp butter. Spread on roast. Wrap roast in dough, seal edges. Cut out any thick folds. Place on greased cookie sheet. Prick dough for escape of steam. Brush with egg yolk diluted with water. Bake at 400º for 25-30 mins or until golden brown.
TIP! Use extra dough to make decorative cutouts to place on roast before baking!
