Recipe: Chicken Liver Pate


2 tbsp butter, softened
1 lb chicken livers
3 tbsp mayonnaise
2 tbsp lemon juice
1 tbsp minced onion
10 drops tabasco sauce
1/2 tsp dry mustard
1/2 tsp salt
dash pepper

In heavy saucepan, melt small amount of butter. Add livers, cover and cook, stirring occasionally until livers are no longer pink. Put livers through meat grinder; blend with mayonnaise, lemon juice, butter, onion, tabasco sauce, and seasonings. Place mixture in 2-cup mould. Chill several hours and carefully unmould. Garnish with chopped hard-boiled egg.
